I am making anything and everything with tomatoes,
Canning, salsa, relish, pasta sauce.
While everyones tomatoes are long gone, mine have just begun...on a count of my husband covering them up....with the combination of a very rainy summer and a very early frost...and then a comeback of summer....tomato season was less then ideal for most.
The covering and finally picking a week ago....has given me pounds, and pounds of tomatoes that are all ripe right now, and a box of green that will be ripe as soon as I am done with the ripe ones. I am up to my ears in tomatoes.
However I am thankful for the late tomato season....it worked out great for me.
